Thai Pineapple Fried Rice

Today's been a slow day since hubby and DD left to work and school. So decided I'll make Thai Pineapple Fried Rice for dinner. Thought I'll share the recipe..

Ingredients

Pineapple 1 cup cut to cubes
Carrots 1/2 cup cut to juliennes
Red Bell Pepper - 1/2 cup- 1 cup
Frozen Peas - 1/2 cup
Garlic 1 tbsp minced
Chilli Soy - 3 tsps
Soy sauce - 1 tsp
Salt - To taste
Cooked Rice(preferrably a day old)
Curry Powder - 2 tsps
Pepper - To taste
Turmeric - 1/4 tsp
Brown Sugar - 2 tsps
Cooking Oil - 2 tsps
Roasted Cashews - 10

For the paste

Mix Soy Sauce, Curry Powder, Turmeric and Brown Sugar.

Method

1. Heat 2 tsps of oil (I used Olive Oil) in a wok and saute Onions and Garlic till it becomes pale. 
2. Saute vegetables in it for a min or 2. Add the Paste and saute for 3-4 mins in med- high heat.
3. Add salt and pepper to taste. Add the cooked rice. 
4. Mix well and taste to correct salt, pepper or soy sauce as per taste. 
5. Add 1 tsp water if needed. I did not add any.
6. Add scrambled egg if needed. I did not add any. 
7. Add the Cashews. Give it a mix and switch off.









Add any leftover cooked meat if needed before step 4. If the rice looks to clumpy use little in hands to gently separate the grains before adding it into the wok. Add other colored bell peppers or any thai vegetables if needed. 

This is a very easy recipe and can be done quickly too. Let me know how it works out for you!
